A kitchen serving one product does not need a machine that makes three. A fixed 5.5 in. diameter produces exactly the same tortilla every time, which is what consistency on a service line actually requires, and 5.5 in. is the standard size for tacos and everyday service, sitting between the 4 in. and 6 in. molds of the two-mold version. Dough goes into the top roller entrance and the machine presses from there, so output does not depend on how fast someone works by hand. The rollers and conveyor carry a food-grade non-stick coating so dough releases cleanly rather than sticking and building up, and both are stainless steel, resisting corrosion and deformation through repeated daily service. Beyond tortillas it handles sopes, gorditas, pita and tortilla pizza bases, suiting a food truck, a fast-food shop, a cafeteria or a home kitchen.
